Afritada with Cheese

This classic saucy chicken dish is wrapped in a delectably creamy and cheesy tomato sauce.

Ingredients

1/2 KG CHICKEN, CUT INTO SERVING PIECES  

1 TBSP SOY SAUCE  

1/4 TSP GROUND PEPPER  

2 TBSP COOKING OIL  

4 GARLIC CLOVES  

1 MEDIUM ONION, CHOPPED  

1 CUP TOMATO SAUCE  

1 CUP WATER  

3 MEDIUM POTATOES, CUBED  

2 MEDIUM CARROTS, CUBED  

1 RED BELL PEPPER, CUBED  

2 BAY LEAVES (LAUREL)  

1 CHICKEN BROTH CUBE  

1/2 CUP EDEN CHEESE, CUBED  

1 TBSP BROWN SUGAR

Method:

Saute the garlic and onion. Add in the chicken and stir fry. Add the salt, black pepper, bay leaf, and soy sauce. Simmer for 5 minutes.

Put the potatoes, carrots, green bell pepper, tomato sauce, chicken broth cube, brown sugar, and water. Add the Eden cheese cubes. Add sugar and salt according to taste.

Mix then simmer for 20 minutes over medium heat until the sauce has thickened. Serve hot.
