These potato balls are crisp on the outside and cheesy on the inside.
2 LARGE POTATOES, BOILED AND MASHED
1/2 CUP EDEN ORIGINAL, CUBED
2 EGGS, BEATEN
1/2 CUP BREADCRUMBS
Season the mashed potatoes with salt and pepper. Scoop and make a ball-shaped croquette. Insert a cube of Eden cheese into the croquette.
Roll each croquette in the flour, dip into the beaten eggs, then roll into the breadcrumbs. Chill in the refrigerator for at least 30 minutes.
Heat the oil in a saucepan. Fry the croquettes until they are golden brown. Drain then serve.
