Cheesy Eden Mayo turns up the flavor explosion in this yummy pasta.
350G PENNE PASTA
4 TSP EDEN MAYO
1 CUP CHERRY TOMATOES, HALVED
1 CUP MUSHROOMS, CHOPPED
1 ONION, FINELY DICED
1 CUP SEMI-SKIMMED MILK
2 TBSP PARSLEY, CHOPPED
2 TBSP OIL
1/4 CUP EDEN MELT SARAP, GRATED
Cook pasta according to instructions on the package. Drain and set aside.
In a pan, saute onion in oil until brown. Add mushrooms and cook until soft.
In a bowl, whisk the milk and Eden Mayo until smooth. Add mixture to the pan then add tomatoes and leave to cook.
Add the cooked penne pasta and mix thoroughly. Remove from heat and serve. Garnish with parsley and top with grated cheese.
