No Bake Cream Cheese Cupcakes

No Bake Cream Cheese Cupcakes


For the Crust:

2 Cups crushed graham

1/4 Cup sugar

1/2 Cup butter, melted

    For the Filling:

    2 Bars Eden Cream Cheese 225g, softened

    1 Cup all purpose cream, whipped & refrigerated

    1 Tbsp. Vanilla

    1 Can condensed milk

    1 Tbsp. gelatin powder hydrated with 1/4 cup cold water.

      For the Toppings:

      1 ½ cup butter, softened

      1 bar Eden Cream Cheese 225g, softened

      3 tsps. Vanilla

      1 can Condensed milk

        Cooking Instructions

        1. For the crust: combine all ingredients, then scoop a heaping Tbsp. of the mixture into each cupcake mold then press firmly. Set aside.
        2. For the filling: melt the hydrated gelatin mixture over low flame. Set aside.
        3. Beat the Eden Cream Cheese until smooth.
        4. Add in the condensed milk, vanilla, whipped cream, and melted gelatin. Mix until well combined.
        5. Pour the mixture onto the prepared crust until almost full. Chill for at least 3 hours or until the mixture becomes firm. 
        6. For the frosting: Beat the cream cheese and butter. Mix until well combined.
        7. Add the remaining ingredients. Mix until well incorporated.
        8. Transfer into a piping bag with a star tip (optional).
        9. Then decorate the cupcake with the prepared frosting.
